I live in Canada now, and what they call fish and chips is fish and French fries. I really want a huge heap of proper chips 😮💨.

Large cod, large chips, side of beans.
I’m my healthier mid life:
Medium cod, large chips, curry sauce / gravy
Unsalted/unvinegar’d crispy chips in peanut oil, and a battered haddock lightly drained and taught to swim in tartar sauce

I buy Lake Huron perch, do it in brown butter.
I peel potatoes and cut them into chips, then bake them.
