It looks to me like this is a bug and treating your 2 search terms as an OR … show me posts for “activitypub” or show me posts for the english language (any post in the english language). I think flipboard.com just happened to have recent english language posts. Seems like you want an AND for the search.

Looks like searching only “activitypub” on mastodon will return all federated messages from flipboard.com.
if I search:
activitypub language:IT
will return every italian messages federated.

I did the test now on flipboard.social and the "activitypub language:IT " search returns only the last 4 posts of mine, but without the hashtag

We have been discussing how to extract the implementation from our own internal libraries to make it publicly available.
